What is a Sourdough Workshop?

Loaf Lab equips you with a 3 hours interactive experience from which you’ll leave with:

  • Complete understanding of the sourdough bread baking process,
  • A shaped loaf of sourdough ready for baking at home,
  • All tools to make sourdough on your own, including a starter, and
  • A full stomach of delicious sourdough bread!


1) Sourdough Tasting

Start your journey by tasting a variety of freshly baked sourdough delights— wheat and rye breads, focaccia, and crisp crackers—accompanied with dips and wine. I often include a special loaf, be it my signature matcha-white chocolate or the spicy jalapeño-cheese loaf, there’s alway a pleasant surprise awaiting for you!

2) Mixing the Dough

Roll up your sleeves! I help you mix your own dough from scratch. You’ll learn the easies techniques of mixing the dough and understanding the feel of a well-prepared sourdough with minimum effort.


3) Sourdough Science Explained

While the dough rests, we dive into the sourdough science: from feeding your starter to the magic of fermentation and all the steps involved up to baking. Bring on all your questions!

4) Shaping the Dough

We’ll shape our doughs together, practicing techniques that will give your bread it’s final structure. Your shaped dough is now ready to go home with you. Let it rest at room temperature for a few hours, and optionally a night in the fridge, before you can finally bake it.


5) Bake a perfect loaf of Bread

You’ll go home with your shaped sourdough and the essentials you need to continue your sourdough journey on your own. I’ll create a WhatsApp group to offer ongoing support, answer questions, and share photos as you continue experimenting with sourdough at home.

“Wonderful, laid-back session, perfect for anyone with no experience baking bread as well as the more experienced looking to add sourdough to their repertoire. The variety of breads that Anastasia brought in for tasting was inspirational (from traditional to more experimental variety that ranged from sweet to spicy), and provided a great initial discussion point between the attendees. I’ve personally experimented with pizzas, as well as a recipe from the workshop for using up excess starter to make delicious crackers. Anastasia (as well as the other attendees from the workshop) has also been a great help in providing advice and guidance with troubleshooting any baking issues since I attended, and I find each loaf I make gets better and better. Hi, I’m Anastasia, your host and the founder of Loaf Lab Berlin! Coming from Moldova, a culture that treasures good food and great company, I love welcoming people with an open heart and a freshly baked bread. I bring a blend of joy, creativity, and Moldovan hospitality to Berlin’s vibrant, ever-evolving scene.

With a background in computer science (and a soft spot for robots 🤖), I approach baking with a balance of science and soul. Each workshop is an opportunity to share my love for sourdough, explain it in a structured way and inspire you to fall in love with this magical process the way I did!
